This course in highly professional gelato making is intended for those who have already gained some work experience in the field as well as for those who intend to start up operations.
The course lays the bases for learning how to make Italian gelato par excellence the traditional way.
This course will then qualify participants to go on to the second level course.
The teacher using an innovative teaching method will provide participants with all the tools they need so that they can make their own recipes and personalise them in accordance with the tastes and preferences of their own consumers.
The course consists of a theoretical part and a practical part where participants are actively engaged in preparing the entire range of classic gelato types that a gelateria must offer.
The programme starts with research on ingredients, then goes on to cover the creation of recipes, the ergonomic work method, hygiene during preparation, the organisation of the workshop and production facilities and product conservation.
The aim is to produce delicious gelato that is good for you with a perfect structure that melts slowly and is easily digested, while always keeping a careful eye on production costs.
An analysis of costs and the nutritional value of various types of gelato will also be included in the course and attention will focus continuously on the specific marketing to adopt in managing a business in this sector.
